My blogger friend, Rediscovering Michelle , posted the other day about not liking much fish, so I wanted to share my favorite "go to" fish recipe! We do like a lot of fish down here in Louisiana but unfortunately the majority of places fry it as we have from time to time. Our diet mainly consists of fried catfish when we go to a seafood restaurant. And at least shrimp or crawfish exist down here so we do have some healthier options to choose from as well. But those are too much trouble when trying to make at home. So, we usually end up making our favorite type of tilapia.

6 tilapia filets
2 tbsp olive oil
1/4 cup grated Parmesan cheese
2 tbsp lemon juice
1 clove garlic (minced)
1 tsp minced fresh basil or 1/4 tsp dried basil
1/2 tsp Tony Chachere's (or other spice of your liking)
2 tbsp panko bread crumbs (we use more than this too... just coat the fish with it)
Mix all except fish and breadcrumbs. Spread mixture over fish, sprinkle with breadcrumbs. Bake at 375º for 10 - 15 minutes (depending on the thickness of the fish) and the broil on high 3 - 4 inches from heat for 2 minutes or until breadcrumbs turn a nice brown color.
In other news, I'm GOING TO SEE MATCHBOX TWENTY ON SATURDAY!!!!!!!!! So excited but I'm so worried that the weather is going to be bad Saturday night! We are expecting heavy rain/thunderstorms and the concert is supposed to be held outdoors at a local casino here. I'm hoping that they have made arrangements and can move it indoors (they do have a theatre there as well). Also Chris and I are toying with the idea of going to see Barenaked Ladies, Ben Folds Five and Guster in Dallas in June. BNL and BFF are our absolute favorite bands ever and we have never seen either! So we are really hoping that that will pan out and we can go.
In fitness related, Desiree' news, I am down 1.6 pounds this week! Not as much as I was hoping but at least I'm firmly in the next decade. 9.4 away from 200 and my motivation is HIGH to knock these last 10 or so pounds out and be in ONEderland finally! Bring it on!
Oh, and this goes out to Seymour. It's not you, trust me. It's me. This is not a break up note and I will continue to see you from time to time. But my mom has very generously offered to give me her elliptical machine. I'm not abandoning you or the gym! I will continue to go and spend time with you too but maybe this will help me in the mornings when I need motivation to do a little extra. And hopefully I can knock a few calories out while watching tv too.
Oh! I also got a much, much needed haircut this week.
I guess that's all my updates for now. Still trucking along with counting my calories and exercising. But I think I really need to start incorporating some situps, pushups, squats and other stuff like that in my routine. I'll start coming up with a plan for that soon.
